There are so many reasons to consider a Meatless Meal! You may want to change things up and not cook one of the same meals you have been preparing for months. It could be the desire to implement healthier eating habits or maybe you have decided to support someone extracting meat from their diet for personal or health reasons.

Whatever the reasons it’s a change worth initiating!

By now you may have heard of the global campaign Meatless Mondays. The founder, Sid Lerner, in partnership with John Hopkins University are working to get people to reduce their meat intake. It is a proven fact that you can change habits by starting with simple changes and being consistent. They initiated the campaign by eliminating meat on Monday and who knows what comes next! Their message is simple! “Skip meat once a week”.

To learn more about the Meatless Monday movement visit Mondaycampaigns.org. Sid Lerner started the movement in 2003 in an effort to have people focus on their personal health while also helping the global initiative to reduce the consumption of animal based proteins.

Research shows, there are an overwhelming amount of experts in the medical industry, nutritionist and even real life personal testimonials of individuals that support this effort. The Mayo Clinic states that reducing meat intake, especially beef, has been shown to reduce the risk of death from heart disease, stroke or diabetes.

I don’t know about you but I say let’s give it a try! My Bestie and I are already fasting on Monday’s so I decided why not add meat reduction or no meat to the day. I mean I’m already focused on a renewed me so let’s go all in!!!!

I want to share some of my favorite meatless recipes to get you started. I’ve selected options that are versatile and pretty easy to prepare. As important as it is to implement a healthier dietary lifestyle, it also needs to not add stress to your already hectic, activity filled day.

The Clever Meal’s Mediterranean Bean Salad

This salad is simple but delicious and packed with flavour. It is a combination of tender white beans, fresh cucumber, tomato, olives, red onions and aromatic oregano. You may follow the recipe or make some personal tweaks. Personally, I am not an olive lover so I removed them. I also added fresh cilantro and a small amount of thinly sliced Thai peppers for some added colour and a little kick! You can find their recipe at theclevermeal.com along with other amazing recipes.

What’s Gabby Cooking Garlic Mushroom & Spinach Pizza

This pizza made me so happy I did a little dance while eating it! I have to admit I did cheat a little. I didn’t trust myself to make the pizza dough so I purchased dough from Whole Foods. I mean some things are just not my ministry!

Damn Delicious Parmesan Garlic Spaghetti

The delightful flavor they created from a purée of spinach, parsley and basil is mind blowing. I can’t wait to make this dish again!

A Spicy Perspective’s Risotto Verde Green Risotto

Talk about simple but delicious and versatile. You can add some simple ingredients to switch up what will become a yummy go to dish. You could add a different fresh herb one week or add roasted tomatoes or grilled shrimp the next. This one makes me sooooo happy!

Sip and Feast Escarole and Bean Soup

You have to omit the pancetta in the recipe but it is still incredible. I use to visits a little Italian restaurant when I lived in New Jersey and order this soup at least once a week. They also had a shrimp paste with red and green peppers in a seafood broth that warmed my soul.
